Blackened Shrimp Pasta


Description

Ingredients

Scale

2 tbs oil
1 cup onion
1/2 cup bell pepper
1 tbs garlic
3 cups diced tomato or canned tomato
1 cup diced tasso, andouille or bacon
2 bay leaves
2 tsp thyme
2 tsp hot sauce
2 cups jumbo shrimp – tail on
3 cups cooked pasta
Salt to taste
Creole Spice to taste


Instructions

In a heavy duty pot, heat oil over medium heat. Add sausage and tasso and cook for about 5 minutes. Add in onion, celery, bell pepper and saute until translucent. Add garlic and cook for a minute. Then add diced tomatoes, bay leaf, thyme, hot sauce and 1 tsp of creole spice. In a bowl toss the shrimp with a little oil and creole spice, add to the hot pot, saute for 4 minutes until cooked. Gently mix in cooked pasta. Adjust seasoning with salt, pepper and creole spice, garnish with green onion or parsley.
