Pancake Mix Cake with Chocolate Chips


Description

When a friend dropped of a 10lb bag of pancake mix, I was determined to develop a recipe and share it with neighbors.  This cake is the happy result.


Ingredients

Scale

2 ½ cups pancake mix (mix that requires only adding water*)
3/4 cup sugar
1 cup mini semi-sweet chocolate chips (bonus points if big chips or bars chopped and broken)
1 cup water
1/2 cup greek yogurt
2 tsp baking powder
1 tbs Kahlua
non-stick pan spray


Instructions

Spray a bundt cake pan with non-stick spray.  Preheat the oven to 375.

Combine all ingredients in a bowl and mix with a hand mixer. If it looks a little too thick, add a few tbs of water.  The mixture should look slightly thicker than cake batter.

Once mixed pour into greased bundt cake pan.

Bake for 30 minutes or until it passes the knife test.  Cool and invert and release from the pan.

Top with frosting or powdered sugar or shaved chocolate.
