1 cup grits — quick cooking
1 (16 oz) can sweet potatoes — drained and mashed
2 tbsp butter — unsalted
1 tsp Kosher salt
1/2 tsp black pepper
1 cup Gouda cheese, smoked — shredded
Cook grits according to the package directions. Stir in sweet potatoes, butter, salt, and pepper. Cook
until heated through, and then stir in cheese.
If you can get fresh sweet potatoes, use those!!! You can steam them, roast them or boil them. Serve with pepper jelly and crispy bacon. I replaced the smoked gouda cheese with Sweet Grass Dairy Little Moo Cheese and Tome Cheese. If you’re in New Orleans you can get it at St. James Cheese Company.
